So here I am talking about cupcakes again and the funny part is I read this morning that the cupcake is the #1 trend that is going out of style :( This makes me a little sad and I don't completely agree with that statement. Sure it is more expensive to buy a cupcake rather then make it yourself, but don't you love the feeling of being a little kid again when you walk up to a counter and see beautiful little cakes? I don't know about you, but I LOVE that feeling!! I am still going to continue making cupcakes every Wednesday morning. So that's my rant and rave for today. On that note I have a beautiful display case show casing all of our yummy desserts and in the mix are Red Velvet cupcakes & Cinnamon/Chocolate with Vanilla Bean Butter Cream Frosting. The best part about Lola's cupcakes are I only sell them for $1.50!!!
I am hope you all are having a great day out there and when you need a little pick me up stop into Lola and feel like a kid again with a little sweet treat!

cupcakes still a trend or is it over?
So I have been watching cupcake wars on food network lately and have been re-inspired to bake cup cakes. Now here is the thing every time I make them for Lola no one ever buys them!! Are people on the northshore not getting it? I must say there is nothing better in the world then eating your very own small piece of heaven wrapped in a cute piece of paper. I made red velvet cup cakes & lemon pound cake with coconut butter cream frosting. I sell them for a $1.50 and I know for a fact that I have the cheapest cup cakes around. I don't want to give up on this wonderful treat, but I am at a loss. I make them every Wed. So if you find yourself needing a fabulous little treat stop by Lola and pick up a cup cake or two. I promise you won't regret it!

Carnival Elation
Hi out there!! I just got back from a 7 day cruise and I must say my husband and I had a wonderful time. The weather was amazing and the food was actually pretty good for a carnival cruise. We ate in the restaurants for our meals there is something not right watching people shove food down there throats at a buffet. We went to Jamaica, Grand Cayman & Cozumel. The food in all there ports were great, but I love Mexico and there is a little place that we enjoy going to when we are there. We got back Saturday and I still feel like I am walking on a boat. I ate food equivalent to an elephant and I don't want to see butter and bread for a long time lol!!!
We are getting ready to re-open tomorrow for lunch. I know it always upsets people when we close for two weeks in the summer, but we feel we deserve a break :) We will be open for our regular lunch and dinner hours starting tomorrow.
Well I hope that everyone is enjoying there summer. If you get a chance stop by Lola for lunch this week and get your fix!

Breakfast and what to get?
Question of the morning, every morning.......what do I want to eat?? What do you like to eat for breakfast?
I went to Cafe Degas Sunday morning for brunch and I find myself always getting the same thing and this what I like to call "love" affair has been going on for 7 YEARS!! I am talking about the eggs Benedict. Now the last couple of times I gone I ask for sliced tomatoes instead of the English muffin underneath, but still I can't seem to breakaway! Don't get me wrong it is very good otherwise I wouldn't be ordering it there all of the time. So my question to you is what are you always ordering when you go out? Do you find yourself ordering the same thing all of the time? We get customers all of the time at Lola and they say that can't seem to break from the same thing. Well if and when I ever decide to breakaway from the usual I will let you know. In the mean time I want to hear what you like to eat.

Blueberry Season!
Good Morning!!
I am so excited I got my email yesterday informing me that blueberry picking has begun! I get blueberries from the Saturday Covington farmers market (they are organic) and I also go and pick my own. I found a great place called Blue Harvest Farms $10 a gallon. You have to pick them yourself, but $10 that's a steal in my book. The only thing they used to be open on Sundays now it is Friday & Saturday only from 7:30am till maybe 7pm I think. Check out there website www.blueharvestfarms.com
I have been testing out new dessert's at Lola lately. I did a goat cheese panna cotta the other night with local strawberries and it was good. I also wanted to mention that right now we are showcasing $5 summer drink specials during lunch. We have $5 glasses of wine and a market peach bollini that will knock your socks off!
Blueberry Crisp
Blueberry Filling
4 pints blueberries
1/8 cup black currant liqueur (optional)
1/4 cup sugar
Mix well and let sit
Crisp Topping
2 1/2 cups oatmeal
1 stick cold butter
1 cup flour
1/2 packed light brown sugar
1/2 tsp cinnamon
Mix all together with hands until sandy like texture (it will be lumpy)
Take a Pyrex dish or individual ramikins and fill with blueberry filling. Next sprinkle the crisp topping all over the top. Place onto a cookie sheet to catch any juices that spill over. Bake @ 375 to 400 depending on oven. Crisp is ready when the topping is golden brown and the blueberry filling is bubbling along the sides.
I enjoy this crisp by itself or with a scoop of vanilla ice cream.

Lemon Curd Pie Update

It just dawned on me that I didn't follow up and post my recipe for Lemon Curd Pie. I hate to say it but I eyeball this recipe, so I will measure it all out this weekend and let you know the exact recipe. I made one on Friday and it sold like crazy!! What is it about a lemon dessert? I find people love it or hate it. What do you think?
I am in the process of updating our Lola website. I want people to be able to click on icons that will take you to this blog or the Lola facebook page. I don't know if I have mentioned it before, but if you are a member of facebook become a fan of LOLA Restaurant. We post our lunch specials for the day EVERY morning. We find it makes the whole ordering process on the phone quicker.

Butternut Squash Soup
Good morning out there!
This week starts the beginning of recipes!! I am very excited about posting a new recipe from Lola each week. Today I will be sharing Butternut Squash Soup. Here is a little back story on how this recipe came about.
My love for cooking dates back many many moons ago. Well, when you break it down not to many since I am the ripe age of 27. I loved experimenting in my moms kitchen with whatever I could find. When I was in the 7th grade I traveled to South Africa for the summer there I was able to experience another world of food! When I came back to the states I had fallen in love with butternut squash. So there began my mission to make the most delicious butternut squash soup in the world.
When my husband and I opened Lola this was one of our first soups we put on the menu. I hope you enjoy this recipe as much as I do.
Butternut Squash Soup
2 medium butternut squash, peeled, halved, seeds removed
1 medium onion diced
2 tablespoons extra-virgin olive oil
2 tablespoons fresh thyme
salt & pepper to taste
1 pint heavy cream or whole milk
Preheat oven to 400. Rub halved squash with olive oil and season with your salt, pepper and thyme. Roast in oven until fork tender, this takes about 30 minutes. Add olive oil and onions to a medium saucepan over medium heat and sautee until translucent. Add squash to saucepan. Add the stock and cream to the squash and simmer for about 10 minutes. Adjust seasonings to taste. Use immersion blender to puree. If to thick thin out with extra stock.

Oil Spill & How will it affect Lola?
Hear I go and again another attempt at my blog.
Off the subject of Lola for a few......I can't help but think about all of the wildlife the oil spill is affecting!! I wish that there was something that I could personally do? I wonder if there are any volunteers out there who need more help?
On a different note how will all of this affect not just Lola, but other restaurants?? Will we only be able to get imported crab and fish now? I know oysters will be out of the question. I am happy that we (Lola) doesn't depend on seafood like Acme or other seafood restaurants, but it still hurts. Our dinner menu has plenty of seafood options on it and we make three soups everyday. We always have a seafood based soup. Can you imagine if this happened during Lent ahhh.
We just dredged threw the high prices of crab & crawfish. We waited patiently for them to go down and now that they have (some what) they are about to sky rocket again! I guess there is no winning in this one at all. I keep asking my husband if the seafood companies have made any formal announcements yet......no... they don't even know how this is going to work.
Well all I can say is Lola will still be putting out our wonderful food each and everyday. I know we will have our share of customers that will continue to ask when will we get local crab again. For now we wait and see I guess at this point that's the only thing to do.

Yummy Chocolate Pie!!!
If you are looking for a great recipe for easy chocolate pudding pie check out this months Better Homes & Gardens magazine! I made it for Lola Friday night and it was a hit. I have tons of recipes that I love, but I never had a good chocolate pie recipe. If anyone out there has a recipe for chocolate pie and would like to share send it my way. The recipe called for a store bought pie crust, but I made my own. If you ever need a good recipe for a crust use the recipe on the Crisco can. I hope you have a great week. Blog you later!

We are about to change things up!! Lola's dinner menu is going to be making some changes for the spring/summer. Out with the old and in with the new!!
